Well hello! I’m popping up unexpectedly in your inbox to introduce you to Seasonal Suppers. This is a new segment I’m going to do on the 1st of every month. I’m going to be telling you about the best produce of the month ahead, what’s at its peak and giving some ideas for what you can cook.
I asked on Instagram what I should call this segment and it was a close run thing between Eat The Seasons, Seasonal Suppers and Seasons Eatings (haha) but Seasonal Suppers was a clear winner in the end. Let me know if you like it or not.
I know I’ve said it before but one of the main things from a cooking perspective, about using ingredients when they are at their peak is that you don’t need to do much to them to make them taste delicious! They do the hard work for you by being at their best. If you think about a sad salad tomato in the depths of December - and how they basically taste of nothing? So to get them to taste good you need LOADS of seasoning, you probably need to cook them, add a lot of fat and cook them for a long time to get them to taste of anything. Now compare that to a heritage tomato right at its peak in the Summer - you could eat it like an apple and it would taste incredible! Add a sprinkle of salt, a little olive oil and POW it’s one of the best things you’ll ever eat. Now that might be a bit harder to see in action with things like cauliflower and potatoes but honestly it’s still a thing and really makes a difference.
So to celebrate the start of February - (February also incidentally being blood orange season which is very exciting and something most certainly to get excited about) I’ve got 3 very delicious recipes for you! I know! I’m spoiling you.
Below you will find Leek and ButterBean Gratin with Pork Sausages, Roasted Purple Sprouting Broccoli and Sea bream with Silky Cauliflower Mash and Haddock and Pea Fishcakes with Tarragon Tartare. All of these are so good, they all use ingredients that are at their best and they’re all quick and easy. I can’t wait for you to try them.
