Light pillowy potato dumplings with the delicate flavour of wild garlic drenched in a nutty brown butter sauce and sprinkled with plenty of parmesan. How good does that sound? I hope I’ve done it justice with my description because honestly it’s incredibly delicious.

It’s well and truly Wild Garlic season - a season that is short and sweet but one you should definitely get excited about. Wild garlic is far more delicate than its vampire repelling cousin. It’s always sweet and gives a fragrant taste of garlic rather than one that biffs you on the nose. There are so many things you can do with it but one of my favourite things to do with it is to make these Wild Garlic Gnocchi which are served with a Lemony Brown Butter. This is a killer combo.

Homemade gnocchi are light and pillowy and you will be surprised by how easy they are to make. They seem scary and intimidating but make them once and you’ll realise they are a doddle. The addition of the wild garlic just makes them so flavourful but also very delicate tasting - make these for anyone you are wanting to impress and you are going to knock their socks off. And actually these make a great dinner party dish as you can get them made ahead of time and then simply pop them in boiling water for a few minutes, toss them in the brown butter sauce and you’re done. Just don’t tell your guests how simple they were to make.

I feel very strongly that there are very few things in life that cannot be improved by a brown butter sauce. It takes banana bread from good to great, it makes chocolate chip cookies sing, it can elevate a plain bit of fish in the blink of an eye. I mean Brown Butter in general is just the most incredibly delicious creation and it happens to work amazingly with gnocchi. I love adding a little bit of lemon like I have here to lift the whole thing - seriously this is really so good. Please make it.
