Weeknight cooking should be simple and hassle free. We don’t have the energy, or the inclination to stand around for hours tending to needy pots and whingeing pans as they simmer for hours. Or I certainly don’t! I want maximum results with minimal effort and this way of cooking cod feels like exactly that.
You make a simple yet delicious (simply delicious?) tomato sauce which you pour over the cod and then bake until the cod is just falling apart. The result is perfectly cooked cod which is succulent and full of flavour. There’s no faffing around frying the fish which I know people can be a bit nervous about. This method of cooking fish is so easy and gives you perfectly delicate fish. And then…And then we drizzle it in a herby garlic butter just to kick it up a notch. Seriously so good.
For a really lovely light Summer supper I like to serve this just with huge handful of rocket and a drizzle of balsamic. But it’s also great with creamy mash or rice, either brown or white.

I love this with buttery rice or with creamy mashed potato. Rice is probably a slightly quicker, less faff option so depending on how you feel you could do either. I love using the pouches of microwave rice to make it even easier. Can also highly recommend coconut rice with this, I love cooking rice in coconut milk mixed with water and a little salt and it makes the most delicious coconut rice.
