You know that feeling when time is short and energy is flagging, but you want something incredibly delicious? Well this is the recipe for you. This is a classic Chinese recipe, a staple in most households and if you haven’t tried it before, it’s so easy.
A simple piece of fish (I normally opt for cod but salmon or seabass also work well) is topped with ginger matchsticks and steamed gently. It’s then served with rice and pakchoi and topped with spring onions and herbs and then dressed in a rather dramatic and intensely satisfying sizzling oil.
That’s not even the best bit. All of this and it’s ready in less than 20 minutes. Oh and there are minimal ingredients and it feels light and fresh. Have I convinced you yet?
I look forward to this all day when I know I’m making it for supper and my girls love it too, so we often make this at the weekend when we’ve been out all day and need something fast.
To me this ticks all the boxes of a great weeknight supper. Low effort, maximum rewards. But the first time I had it was at a friend’s house when I went for supper and she gave us all our plates at the table - filled with rice, pakchoi and the gingery fish and then she came round and did the sizzling oil to each of us in turn. This turned something very simple into quite the show stopper. Which just goes to show that cooking delicious food really doesn’t have to be complicated and you can dazzle people even with the simplest of things. And it’s nice to dazzle people sometimes isn’t it?
