Did you know that there are now over 120 recipes in the archive for Dinner Tonight? That’s far more than you get in the average cookbook! And yet I cannot believe that I haven’t shared this recipe before. It’s such a favourite of mine and it couldn’t be easier. It’s the perfect weeknight recipe as it comes together in 20 minutes(really really) and is just so simple.

I know I’ve said it before many times but cooking delicious food really doesn’t have to be complicated. So often it’s the simplest things that are the best and this is the perfect example. And there’s barely any cooking involved.

I love this for a weeknight when it’s just us but I also love making this for friends. Minimum effort but it doesn’t look like that, and so people are always disproportionately impressed. And we all want to impress the people coming over a little don’t we?

Without further ado here’s what we are making. You bung the tomatoes in the oven and cook the steak and then it’s just a case of assembling it. It really couldn’t be easier!

This recipe serves 2. Depending on the size of your steaks you may be able to do one between 2 as slicing the steak and serving it in this way does have a strange way of making it go further. But I will leave this up to you.
