There is a famous rule in the world of cooking that seafood and cheese should not be served together, but it’s a rule I’ve really never understood. And perhaps it goes to show that the most important thing when it comes to cooking (and indeed eating) is that it’s what you like that matters most. Rules are there to be helpful but at the end of the day, the only thing that matters is that you are making food that you love to eat!

This dish is so simple to put together and utterly delicious. It’s made in one pan, because I know you love those. There are 6 ingredients, (not including the usual suspects of salt and pepper and olive oil) proving that cooking really doesn’t have to be complicated, it can be simple and delicious.

The crispy salmon works so well with the flavours of this simple rich creamy tomato sauce. The sauce feels decadent but somehow not heavy and it’s just a very good, very comforting combination I think you will make time and again.

There are lots of different ways to serve this. I love it equally served over bowls of rice or creamy mashed potato. Or tossed with pasta. It’s family friendly, worthy of a date night but easy enough to do when you’re tired. So you see it really has a lot going for it.

I’d say this recipe serves 2 for one salmon fillet each and a generous amount of sauce. You can always save some left over sauce to toss through pasta the next day or serve with chicken meatballs and orzo for a similar but also very different supper. If serving 4 people I would probably make the same amount of sauce but cook 4 salmon fillets (more in The Notes).
