It may be the season of comfort food but I still find myself craving dishes that are light and fresh. These easy baked fish parcels are so incredibly delicious. When baked en papillote (or in paper), the fish cooks quickly and comes out tender, moist, and so flavourful.
These baked fish parcels come together in about 25 minutes. So simple to put together and they feel healthy but exciting. They’re just really good.
You know I love cooking but that just doesn’t mean that I want to spend hours in the kitchen and so I’m always thinking of ways to make life easier. But I never want to compromise on taste or flavour. I want maximum results for minimal effort. That’s not too much to ask is it? Well anyway, these baked fish parcels tick all the boxes!
If you haven’t cooked fish like this before, it’s such a simple way of doing it. You simply lay out a piece of baking parchment, jumble together your chosen vegetables, lay the fish on top and then drizzle over the sauce. Wrap them up into sweet little parcels and pop them in the oven. They steam as they cook and the result is perfectly cooked fish that is just bursting with flavour.
I love these after a long day but I also do love serving these to friends when they come over. Everyone gets to tuck into their own little parcel which I think is quite fun! You can also get them assembled ahead of time and then just bung them in the oven when you’re ready.
I love this recipe with this soy, ginger and sesame drizzle which works really well with the pak choi. But the fish parcels are also so easy to adapt. Really lovely with tomatoes and garlic, and thinly sliced potatoes or tender stem broccoli. Or try with some lemon, basil, chopped olives and capers and a sprinkling of feta. I sometimes just use a really good chilli oil, or a peanut rayu and drizzle that on the fish and vegetables before I wrap them up and that’s another easy and delicious option.
I love a firm white fish for this but salmon also works really well, and you can add a handful of raw prawns to your parcels too. Use what vegetables you have but for harder vegetables like carrots, or potatoes, you may want to slice them very thinly, grate them or parboil them before they go in the parcel so you know they will have time to cook.
Serves 2 - but very easy to adjust accordingly.
