Crispy Mediterranean Chicken with Creamy Cauliflower Mash
One of my all time favourite dishes
Firstly I want to apologise because really truly this is probably the dish I cook the most often and I haven’t yet shared it with you. Which, with hindsight, seems amiss of me. This is just the most delicious combination. I’ve made it so many times for friends and now when I go to their houses, this is so often what they make me and let me tell you, nothing makes me happier. It’s one of those recipes that once you’ve made it once, you will be cooking it all the time.
I love to serve it with cauliflower mash - which is something else I make a lot. The key is to really blend it well so that it is silky smooth and unctuous - meaning you blend it until it looks good and then blend it some more. Also cream and butter…because, well, you know. It also reheats really well and there’s no threat of it going gluey or gloopey like mashed potato can.
Now don’t be alarmed that I am telling you to use an entire bulb of garlic. You know by now I love garlic but really truly I promise you this isn’t garlicky. Which I know is weird, but because it gets roasted in the pan with the olive oil, the tomato and chicken juices it goes deliciously soft and squishy and really very mellow.
This is almost one pan - because it’s all roasted in the oven apart from the cauliflower mash but that’s really very simple so there is minimal washing up and I just know you will love it. In fact, I’m off to make it for Sunday lunch xxxxxx
