Crispy Lamb Bowls with Hummus

This one is the ultimate flavour bomb - crispy lamb, melty feta, sweet roasted veg and silky hummus

This is quite possibly the most delicious dish I’ve made in a long time. So full of flavour, every mouthful is truly a delight and yet it’s really so simple to make. Really astonishingly good. If you got this in a restaurant, you would be over the moon and yet you’re going to pull this together after a long day in just 30 minutes. Let’s go.

Start by roasting the aubergine, tomatoes and chickpeas in the oven. So far, so simple. While you wait for them to cook, you mix the lamb mince with various spices and crumble in the feta. Fry this until crispy - the feta melts as you do this and you’re just left with a mellow feta flavour - you’ve got to try it! The lamb will produce quite a bit of liquid, don’t panic, use a larger pan than you think you need so that it can evaporate - you need it to evaporate so you can get the lamb nice and crispy and wait until the pan is really hot before you start cooking the lamb. If there is too much liquid, just scoop it out, don’t panic.

And I LOVE serving this all piled high on swirls of hummus. Store bought is more than okay - it’s a busy weeknight after all. Genuinely I can’t wait for you to make this.

2 generously but easy to double and I also never complain about having leftovers for lunch

You will need:

1 aubergine, cut into chunks

250g cherry tomatoes
