Creamy Butternut Squash and Butterbean Gratin
So simple but so incredibly comforting and delicious
It’s gratin weather. Cosy, comforting and very simple to assemble. I would say a relaxed 10 minutes to pull this one together and then you simply sit back and let the oven do the work. Heaven after a busy day.
I often make variations of this during the week when it’s just us but it’s also lovely enough to serve when you’ve got friends coming over. Serve with a crisp green salad with a sharp vinaigrette possibly with some shallots in there to counteract the slight sweetness of the butternut and the cream and your guests will be cooing over it.
Accidentally vegetarian, but still satisfying which is what I want from a vegetarian dish. Gone are the days when people assume vegetarians nibble sadly on a solitary salad leaf, there are SO many delicious things you can do with just vegetables, sometimes it just means getting a little creative.
