Because sometimes we need supper in 10 minutes. Quite often actually I find.
When I was working as a private chef, I would get home at the end of a long day and really truly the last thing I would feel like doing would be to cook. I needed to come up with dishes that were really quick and easy but that still delivered on flavour. And this has been a favourite of mine for many years.
Here I’ve used giant cous cous as it’s a favourite of mine, but this same recipe would work with rice, or buckwheat noodles or orzo. I’ve tried them all and they are all great so use what you have to hand.
This has all the flavours of a prawn saganaki which is truly one of my favourite things to eat, but it all comes together in 10 minutes and is just so delicious.
